How to Store
The easiest way to keep lemon balm fresh is to put the cut ends into a jar/vase with about an inch of water – just snip off the lower leaves as you need them and pop them back in the vase when you are done.
For longer term storage you can pop a plastic bag over the top of the jar/vase and keep it in the fridge.
Too many to eat this week?
Lemon balm can be frozen whole or in ice cubes. To freeze it whole lay the stems on a sheet pan and flash freeze before transferring to a jar or bag. To freeze in ice cubes, remove the leaves and place in half filled ice cube trays – the leaves will float but that’s ok. Freeze for an hour or so until the leaves are stuck to the half cube, then top up with water to cover the leaves and return them to the freezer. You can also use tea or juice in place of the water if you plan to use these in drinks.
