Summer Cucumber, Tomato and Shiso Salad


1 Yellow tomato
1 cucumber
1 small red onion
2 large shiso leaves
2-3 Tablespoons red wine vinegar (or white wine, or apple cider vinegar)
salt and pepper to taste


Dice the tomato, cucumber and onion.
Chiffonade the shiso leaves by placing one on top of the other and then rolling them like a cigar, finely slice the rolled up leaves.
Toss the diced vegetables and shiso leaves in the vinegar and chill for an hour or so.
