Beets will store for about one week in the refrigerator if trimmed of leaves (leave 1-2 inches of stem to prevent bleeding) and bagged without washing.
Prior to cooking wash the beets thoroughly but do not peel.
Beets can be eaten raw, oven roasted in a foil packet at 350° for 1-1½ hours, boiled for 30-45 minutes or steamed until tender.
Once cooked the skins will slip off easily.
