Bell peppers come in a variety of colors but all begin as green peppers. Some people refer to green peppers as immature, but that isn’t quite right, the peppers mature while staying green and then mature some more into the red, yellow or orange colors.
How to Store
Store unwashed (or washed and thoroughly dried) peppers in the crisper drawer of your refrigerator. Colored peppers will spoil faster than green peppers. The first sign of spoilage is that the skin becomes wrinkled due to moisture loss. At this stage they are still edible, but will be less crisp and better used in cooked dishes.
