New Potatoes

New potatoes are potatoes that have been harvested before they are fully mature and have not been cured for storage. The skins are thin and delicate and the flesh is waxy rather than dry and starchy.

You can use them in place of white potatoes in any recipe, but it is best to use them in recipes that showcase their sweet, creamy texture. For me, this means steamed whole and eaten plain or with a light dressing.
