Tomatillos

Despite their name, tomatillos are not small tomatoes but they are distantly related.

The husk of the tomatillo should be removed and the fruit rinsed with warm water to remove the sticky residue. This reveals a bright green or, depending on variety, purple or green and purple tomato-looking berry that adds a lovely zing to summer recipes.

Tomatillos can be eaten raw, blanched or roasted.
