Vegetable Tian

Summer Vegetable Tian

Ingredients

Eggplant
Zucchini
Yellow Squash
Onions
Tomatoes
Garlic
Potatoes
sunflower or coconut oil
fresh thyme or basil

Instructions

Slice all the vegetables (including the garlic) to about 1/8th inch thick - I used the thickest setting on my mandolin for this.
Grease a shallow ovenproof pan with oil and place the garlic slices on the bottom.
Sprinkle on half of the thyme or basil.
Arrange the remaining sliced vegetables in an attractive pattern - concentric circles for round pans or parallel lines for square or rectangular pans.
Sprinkle with remaining thyme or basil and a drizzle of oil.
Cover with foil and bake at 400 for 30 minutes.
Uncover and bake for a further 10-15 minutes.
Serve hot or cold.
